Cristiano learned this recipe from Master Artisan Amelio Stefani. Sopressa means "squeezed." Traditionally it was made bu squeezing salami between two pieces of wood. Our sofi award-winning Sopressa is made with organic garlic and Sangiovese wine from famed winemaker Bibi Graetz. It pairs well with alpine-style cheeses and Tuscan wines. It is a great addition to a charcuterie board or sandwiches.
